Ingredients:
- 400g all purpose or 00 flour
- 4 large eggs
- pinch of salt
- On a clean work surface, lay out the flour in a pile, and with your hand create a well in the center that is big enough to fit the eggs. Crack all four eggs into the well and add a pinch of salt. Using a fork whisk the eggs being careful not to break the walls of flour. Slowly whisk in small amounts of flour from the sides of the well. Try to incorporate as much flour as possible and be patient. Once the eggs mixture has thickened and become pasty you can start using your hands to form the dough. Once the dough comes together kneed it for about 10 minutes, the dough should be smooth and should bounce back when you press on it with your finger.
- Let the dough rest for 20 minutes wrapped in a damp dish towel. Using a pasta machine or by hand form the dough into your desired shape.
